1. Restricted ventilation and kitchen heat

Every refrigeration system moves heat from inside the cabinet, cylinder or evaporator to the room through its condenser. 2. Overloading and door-open time

Rush periods change how equipment is used. Pans get heaped above the fill line, prep table lids stay open, reach-in shelves get packed against the evaporator fan, and soft serve gets drawn faster than its rated hourly output. The equipment specification was fine; the operating pattern outgrew it.
